Roast Halibut w/ Yuzu Passionfruit Sauce

Halibut is great any time of year, it’s firm white flesh is appealing for any occasion or menu. This spicy citrusy sauce is a perfect complement and will work well with any combination of side dishes. Remember when buying your passionfruit, look for the wrinkled ones. That’s how you know they are perfectly ripe.

Ingredients:

    2 whole passionfruit

    1/2 tsp yuzu paste

    1 tbsp honey

    1 tbsp olive oil

    1 clove garlic

    Halibut (allow 4-6 oz per person)

To Prepare:

Preheat the oven to 450*

Halve the passionfruit and scoop out the pulp. Press the pulp through a strainer to separate out the seeds. discard the seeds. Mix the passionfruit juice with the yuzu & honey. Add more Yuzu to taste. Add the olive oil.

Place the halibut in a glass dish. Thinly slice the garlic and lay over the halibut. Spoon about half of the passionfruit sauce over the top of the halibut and roast for about 10-12 minutes. Cover with foil and continue cooking for another 4-5 minutes. Note: roasting time will vary depending on the thickness of your fish, you will want to check frequently so that you don’t over cook the fish.

Remove the fish from the oven and serve, drizzling the remaining sauce over the plated fish.
